A Chef's Life Fourth Helping

A Chef's Life teaser from A Chef's Life on Vimeo.

Have you watched this show yet? The "Fourth Helping" (season 4) debuted last Thursday night on SC ETV.  A Chef's Life is truly one of my favorite shows--Chef Vivian Howard is a gem, and I enjoy watching her create amazing and creative food using local ingredients.

James and I visited Kinston, NC last year and we LOVED every second of our visit, especially our trips to Chef and the Farmer (Vivian's premier restaurant), and The Boiler Room, her more casual oyster bar.  I blogged about our experience here.

Vivian has a new cookbook coming out this Fall and she will be in Columbia, SC on October 12th signing cookbooks with her food truck in tow. You can purchase tickets to meet Vivian, have some of her delicious food, and get an autographed copy of Deep Run Roots.

Here's to many more helpings of Chef Vivian Howard & A Chef's Life!

Charleston Quickie

It's finally Friday!  Our family is headed to Charleston tomorrow to visit some friends, eat some fresh seafood, and ogle the fishes.

My oldest friend, (seriously, we were at each other's 1st birthday parties), just had her 2nd little girl, and her first child is just a bit older than Jones, so the babes will likely have a blast playing together.

We're getting a babysitter Saturday night and going out to Hank's Seafood Restaurant.  I've never been, but it's been voted "Best Seafood Restaurant" by the Charleston City Paper for 13 years, so there's that.

Before we head home on Sunday, we're gonna take all the kiddos to the South Carolina Aquarium.  Another place I've never been; I think Jones will love it!

Juanita Greenberg's- I want the crown light for my home.
If I can talk James into it, we'll also probably hit Juanita Greenberg's on our way out of town.  I'm an addict.

What should we order at Hank's?  What are you up to this weekend?

Denver Eats (Well)

I was in Denver, CO last week for a quick 2-night work trip.  While there we managed to dine at a few very cool local places.

LaLa's Artista Pizza

LaLa's Wine Bar & Pizzeria- great, creative pizzas.  The anchoviest-Caesar salad dressing I've ever eaten, but in a good way.  Nice, neighborhoody-feel.  Would be an awesome place to enjoy a happy hour drink or three, al fresco.

Caffe Sanora- we ate breakfast here-- right across the street from our hotel.  Very friendly service; amazing homemade sundried tomato & asparagus quiche.  In fact, since eating it, I've been on a major quiche-kick...made 7 in the past week!  (5 were to give as end-of-the-year gifts to Jones' teachers).  A decidedly local and hippie-ish place (all organic); I talked with a local mom about her 13-month-olds' use of sign language over breakfast--only in Denver!

Las Margaritas- Pretty heavy stuff for a lunch, but it serves authentic Mexican food.  Since it was a working lunch, I didn't indulge in a Margarita, but hear they are good.  The salsa was amazing.  Wish I had brought some home.

Popcorn and Cava at Linger

Linger- The "trendiest" of the spots we ate on the trip, but still, with a down-to-earth and friendly feel.  Popcorn is the gratis tablefare, differently-spiced each night.  The view of the city is fantastic.  We sat right by the "open wall" and had some awesome small plates.

All-in-all, not a bad list of restaurants in Denver, considering we were only there 48 hours and we worked most of it!

Oh, and a fun tidbit about Denver, they ID everyone.  Seriously, everywhere I ordered a drink I was carded.  And it was awesome.

New Favorite Salad

This is a preview of my full post coming Thursday about the City Roots Harvest Dinner that we attended last week.  It was ah-mazing.  If you are thinking of attending one in the future, do it.

the hubs exclaimed: "this is the best salad I've ever had." and meant it.
Seriously yummy salad consisting of City Roots micro-greens, local feta, thinly sliced radishes, and an amazing cumin vinaigrette, for which James swears he's going to call Chef Ryan at 116 Espresso & Wine Bar to get the recipe.

The bread was from Heather's Artisan Bakery and it was slathered with anchovy-butter (from Happy Cow Creamery) and topped with thinly sliced radishes.  Amaze.

Shouldn't We All Care What We're Putting In Our Bodies?

As I explained it to my Social Policy class Monday night, I have a new "passion," if you will...educating myself and others about the food, namely meat, that we are putting into our bodies--and the bodies of our children. #1 on my 31 Things for my 31st Year List was to become more aware of what I eat, where it comes from, and how it affects my health.

The first thing I did towards this end was to read Eating Animals by Jonathan Safran Foer. This promptly had me not eating animals...if you haven't read it, you should. I have since watched Food, Inc. and investigated a few of the local meat producers, Caw Caw Creek Farms and Wil-Moore Farms. I have also begun shopping more at the All-Local Farmers' Market at 701 Whaley St. in Columbia.

Today I came across two articles that are valid pieces of investigative journalism questioning the safety of the meat we eat in this country--the safety of beef processing as well as the antibiotics fed to the animals.

Here is an article I found on the blog Grits and Gravy: Adventures of a South Carolina Foodie. The article by Michael Moss of the New York Times questions the safety of beef-processing methods in America.

This article I found in my Pew Charitable Trusts weekly e-mail, Pew News Now. It is a report by Katie Couric of CBS investigating if feeding farm animals antibiotics is producing drug-resistant bacteria. (I think, how could it not be?!) Here is the video report, aired on the CBS Evening News on February 9, 2010.

In the midst of all of this educating and investigating and finding out things I never wanted to find out about the meat that is raised and slaughtered in this country, I am also learning about people who are doing the right thing. The right thing not only for the people they are feeding, but also for the animals they raise for meat. Two of those people, locally, are Emile DeFelice, of Caw Caw Creek, and Kristian Niemi of Rosso Trattoria Italia (and Gervais & Vine). Niemi does his best to serve local ingredients when possible, as well as humanely and organically raised meats, such as pork from Caw Caw Creek Farm. See the video below, Episode 1 of a new series called Off Menu with Kristian, where he takes a tour of Caw Caw Creek and then demonstrates a recipe of Grilled Pork Chops with Apple Chutney.

Stayed tuned for more posts highlighting local restaurateurs and farmers doing their best to serve healthy, humanely treated, and locally-grown meats and vegetables.

Chipotle- Slow Food. Fast.

So, I'm currently reading Eating Animals by Jonathan Safran Foer, and as I was reading tonight I read "Chipotle is one of the only national restaurant chains claiming to obtain a significant portion of its pork from animals that don't come from factory farms."

It just so happens that a Chipotle Mexican Grill opened in Columbia just last week...I had no idea about their mission, "Food with Integrity." Very cool. When I looked up Chipotle, I learned that they represent a return to organic and sustainable farming; they use only antibiotic-free, naturally-raised chicken and pork and 50% of their beef is raised this way. Chipotle calls their menu items "Slow Food. Fast."

I have not yet visited Chipotle, but this certainly makes me more excited to do so. Here, Steve Ells, the founder and CEO of Chipotle speaks about his company's mission on Nightline:

And here's an article that discusses Chipotle's intention to install solar panels in 75 of its restaurants. If only other restaurants would take notice that you can be environmentally-friendly and serve meat that wasn't raised and slaughtered on factory farms...and still make a profit, too. If only the American public was more educated about factory farms and demanded better for animals, ourselves and our children.

Chipotle's website advertises Food, Inc. View the trailer here. I haven't seen this film yet, but I really want to.

And, Fresh is coming to The Nickelodeon on Tuesday, February 9th at 6 PM. See a trailer for Fresh here.

Staying true to my promise to be more aware of what goes into my body and where it comes from, I am really interested in the Slow Food movement and educating myself about our American food sources.
